Note that the openlayers demo loads vectors and renders the vectors on
the client. Its SLD parsing is limited and can select one layer and
render all that layer one color.
The full SLD spec supports filtering. So you could say Render all
cities
layer with attribute popultation>1000 red.
Maybe you would be interested in writing the Filtering code? Or maybe
sponsoring one of us developers to write it for you?
The full SLD spec is supported by Geoserver (on the server). If you
want
to do your rendering on the server and load WMS layers (images)
instead
of vector then have a look at the SLD demo.

The GML Viewer (which is based on the MapPaneOL) converts a GML file
to SVG/VML for rendering.
