I have no profiling data, but I do not think that the geometry field makes much of a difference. It's faster because the amount of data to transfer is smaller. But that should only make a difference on low bandwith connections. Having said that, I do not think that the XSL transformation is the component of the GetFeatureInfo roundtrip. But to make sure, just do a profiling session in Firebug on Firefox, and compare it to the times in the net tab of firebug.
