Have you downloaded and installed the sample package (and read the other resources) on this page:

I think, but am not sure, that you can inline the stylization in the layer definition. The XSD should make this fairly clear if you want to dig into it. Personally, I would just create the symbol definition as a separate resource in the session repository and reference it from my session layer definition.
