If you find a way to convert EMF to XPS, you can then (theoretically) use the XPS geometry directly into your symbol definition, since it's the same format. I realize it's a big "If" though.

All you should have to do is upload an image to the resource data section at the bottom of the symbol XML editor in in recent Maestro releases, and change your reference to the name of that image. If that doesn't work, the format probably isn't supported.
