Although perhaps not the most orthodox of sources for map history, you might
try the Great War Forum which has a section on Salonica at
http://1914-1918.invisionzone.com/forums/index.php?s=19c039af84fbce7f668dca2381122b5c&showforum=96
There are quite a few people on that forum with encyclopedic knowledge of
military mapping of the period in that area. It is possible that they can
help you find maps from 1914 to 1918 that might help fill in at least part
of your current gap in mapping knowledge.
