We have "average" plus other kinds of slope...

FITTED - is the default keyword and results in the slope of
a plane fitted through the values of the target cell and its
eight neighbors.

 MAXIMUM - specifies that the maximum of the four possible
slopes drawn through the eight neighbors is assigned to the
center cell.

 MINIMUM - specifies that the minimum of the four possible
slopes drawn through the eight neighbors is assigned to the
center cell.

 AVERAGE - specifies that the average of the four possible
slopes drawn through the eight neighbors is assigned to the
center cell.

..."fitted" is arguably the best.  The only other kind of
slope calculation uses TIN (Triangulated Irregular Network)
and reports the inclination of the individual triangular
facets-- great for describing a surface but can't be used
with grid-based maps and analysis.
