This is very difficult if you want a realistic and correct result.

I have encountered two solutions which can deal with that problem, one is 
Vertical Mapper (create additional points with poly2points and then 
perform a inperpolation, either with natural neighborhood or inerse 
distance weigthing with 3 or 4 zones with 1 as minimum and 3-5 as maximum 
- the search distance has to bee a littel longer than the holes in the 
dataset, but not the default value). The other is IDRISI32, but it's slow 
compared to vertical mapper and has problems with large datasets.

Don't use TIN or simple inverse distance weigthing - these methods will 
create interpolation artifacts steps in your model (it's always a good 
idea to look at a histogram of the resulting grid)

This is a question from a very inexperienced MapInfo user - I have =
topographic data (contours, elevation points, waterbodies, etc.) in =
MIF/MID format.  I would like to create a raster DEM (to be imported =
into another program) from the contour data.  Can anyone tell me a =
simple way of doing this?  I tried the "grid" function in MapInfo, but =
that only seemed to grid the data based on the centre point of the =
contour polygons...
