It is probably because the table structure has been changed for those tables
that MI has a problem with.
For example, you have a table with a text field defined as 15 characters and
you are using this field to label objects (say towns) on a map. This map is
then saved as part of a workspace.
Later on you realise that 15 characters is not enough for all town names, so
you change the field definition to 30 characters. The next time you open
the workspace MI can't label the towns because it is expecting a text field
with 15 characters, hence the Variable or Field ID not defined in .wor
message.
To prevent this you should re-save the workspace after you change the field
definition. But don't forget that the table will be removed from your map
when you do this so you will have to add it back in, set the labelling,
style overrides etc before you save the workspace.
Hope this helps.

Subject: MI-L Variable or Field ID not defined in .wor
Dear List,
I have recently copied all our MapInfo tables and workspaces to a new
volume on the same server hard drive.
References/Directories/new_drive_name is correctly handling the changed
path to these files.
However within a directory which contains many .tab which do open there are
two .tab which do not open from .wor even though they do open
individually.
The message in both cases is "Variable or Field ID not defined" even though
ID is the correct column name to label with.
When I delete all references to these .tab in a text editor all other parts
of the .wor do open correctly.
Any Ideas?
Regards Dave
