Andy,
You could use Triangulator from Mercator Geosystems for creating contour
lines and surfaces from these point locations.
You can download a free trial version at www.mercatorgeo.nl
While you're at it take some time to look at HotSpot. HotSpot was originaly
developed for the Amsterdam Police department and is used to create spatial
density maps of points.
