Hello David, I have no experience with Illustrator but I would imagine that there are settings for monitor colour correction, typically a gamma setting. This exists to overcome slight differences between monitors. There may also be some colour correction process in effect. If such a setting is in AI, switch it off or set the value to zero and your colours should display the same as in Pro.
