Miles, i am not aware of anything freely available for rejigging the legend of thematic layers but if you can set up the table to 'permanently' have the desired colours/ patterns etc i wrote a program called qik_key.mbx (on the directions mag site) to do 'non standard' legends ... its a bit old now and could do with a rewrite but it might be of use to you...i will also take a look at perhaps making it use themtic layers as well.....
