GTOPO30 DEM's are at lower resolution (~ 1km). They can be found at:
http://edcdaac.usgs.gov/gtopo30/gtopo30.asp
They can be also translated to Vertical Mapper using 'Grid Translator Pro for MapInfo Vertical Mapper'.

I just heard from a co-worker that that data goes flat above a certain
elevation over Everest.

If you know the latitude and longitude of your location (Mt. Everest), then get its corresponding DEM as they are named with the geographic coordinates of the low left corner of the DEM dataset. Be aware that SRTM DEM has, however, some gaps in them.
The SRTM DEM comes in a binary format with an .hgt extension. Once you have the data, you can use 'Grid Translator Pro (GTP) for MapInfo Vertical' to upload the data to Vertical Mapper. Perhaps someone out there in MapInfo-land knows of a source for the highest resolution DEMs and/or Topographic Raster maps of Everest and K2....
I don't mind if it's commercial data - so long as it's good data...
