To my knowledge Mapinfo or vertical mapper cannot perform actual operation on raster format (like extracting data or reprojecting) it can only display them. You would need a program like IDRISI to perform such operations. However with R2V you could create a vector format and then do a "Region to Grid" with one (or a combination) of the attributes created. You would then have a classified grid that you can work with in VM.
I have never used R2V but make sure that the vector regions are defined as regions (and not rectangles) or else VM can get confused.
