If you are using the MapInfo 3.0 symbols or the MapInfo Symbols you'll see that many of the symbols are shown twice, one with a colored center and once with a transparent center. So just choose those with a transparent center. Unfortunately there is no "transparent" color in MapInfo even though this also could have helped you.
