Hi Andrew!
There is really nothing particular about the True Type fonts that MapInfo uses as symbols, other than that they need to have the symbol attribute set in order to appear in the symbols font picker.
One useful page is http://www.mapsymbols.com/symbols2.html
This is said to be for ESRI stuff, but the symbol fonts work in Mapinfo as well.
Some links seem obsolete today, though.
