Sam,
I believe I'm understanding your question right: You have two tables one was an excel file and one was a polygon layer and now you have the two layers joined. Now you would like to update that data with new info from another excel sheet.
The easies way to update the data is to go table>update column then update the MI table from the excel sheet that has the new info.
So somthing like this:
Table to update: "mytable"
Column to update: "old info column"
Get value from: "new excel sheet"
Join>where "my table unique id" = "new excel sheet unique id"
Calculate: value
of: "new excel sheet column"
