I do that with assay values as well as, on regional maps, deposit size. I've varied, symbol size, color, and both. You can do a lot with thematic mapping in MI, but it's also possible to query out the ranges and have them as separate layers in a mapper, style-overriding each to a specific symbol/size/color if you need to do something unusual.
