While there is no way to alter the behaviour of the Info Tool as such, 
I can think of a couple of other solutions. But the means at your 
disposal depends partly on how you define 'relevant data'.
Do you mean
1 that the info tool should only find one or a few of all tables in a 
mapper window?
or
2 that the info tool should show only a subset of the existing columns 
in a table?
or both? (then add answer 1 and 2 below)

1 Using the layer control, make all irrelevant tables unsnappable. 
Thus, the Info Tool will not find them.

2 Using SQL select, make a selection on a relevant table, using no 
condition to find all posts, but include only relevant columns in the 
selection. Re-order them if necessary. Then use the selection instead 
of the complete table in your mapper. The Info Tool will now show only 
the selected fields. Name the selection in such a way that you are able 
to recognize its origin.
