Gstat is one option ( http://www.gstat.org/ ) and Saga GIS another (
http://www.saga-gis.uni-goettingen.de/html/index.php )
There is a close relation between Gstat and the chapter about interpolation
in Burroughs book: Principles of Geographic Information Systems and it's
fine for small to moderate datasets, but no substitute for a commercial
program for large datasets (sidescan sonar, lidar laserscanning etc.)

Interpolating points using methods such as Inverse Distance Weighted,
Splines, Kriging, etc.
