Eddie, I'd recommend rebuilding mapnik using SCons and watching the compile and link flags that are sent to gcc to build rundemo, then manually add those in XCode.
Building rundemo is off by default in Scons so do: python scons/scons.py DEMO=True The reason it is off is that most users won't have cairo support and the build of rundemo will not work until we fix http://trac.mapnik.org/ticket/285 by adding compiler flags that will skip the need for cairo if not available, like the rest of the Mapnik code base.
