Ha - that will account for why I couldn't find what to put at the top of the stylesheet to set it then!
I will give that a go, which will sort my immediate challenge, but I would still like to develop a more user friendly OSM stylesheet, so would welcome your thoughts on carto, cascadenik etc. Thanks Graham.
