you can do that with the TEXT keyword at the CLASS level.
CLASS
TEXT '>'
LABEL
FONT "symbolfont"

Ah, I did miss something ;)
I just had to adjust priorities so that the symbol layers always draw
first (and forced), and now the labels don't cover symbols.
