Hi, All formats which you saw in your original GetCapabilities list are usable, as well as all the formats which you define yourself in the mapfile with OUTPUTFORMAT http://www.mapserver.org/mapfile/outputformat.html.
What you can define in OUTPUTFORMAT depends on how your Mapserver and GDAL that Mapserver is using are compiled.
