Without more specifics, it's hard to tell exactly what you are trying to do... but why not create a 3rd field that represents the interaction of the two fields you wish to map?
Say, for example, you wanted to map tracts on two variables: high vs. low percentages of minorities in your 1st field and high vs. low poverty in the 2nd. Your new field could represent the four pairings that would result: lo-lo, lo-hi, hi-lo, and hi-hi.
