NLP is a very wide spectrum of the language processing tasks: automatic summarization (large volumes of textual data or articles), understand and semantic representation (which can help automatic translation as a natural language generation task rather than word-for-word translation), intelligent searches (e.g. natural language phrases in google or ask.com and others), natural language parsing (which is inherently ambiguous), etc. Basically, understanding the meaning of a textual document in a human language by a machine and then reacting to that as prescribed. If you are talking speech, then that usually has to be converted to text first...
