They're only using parts of GNOME, don't use GNOME shell. There is a push to promote GNOME as being part of the whole OS, not just pick and choose. Canonical picks and chooses parts for their default install. I think it would give a pretty confusing message. Because it is a public mailing list I'll mention explicitly: I don't have any problems with Canonical doing above.
