I would use the normal logo except for the end-of-year holidays and for exceptional cases where we want to celebrate something where the OpenOffice community has an active, prominent role.

So I would understand that we use a "special" variant of the logo again for the language day on February 21 (only if OpenOffice does something to celebrate it: engaging the L10N community, calling for translation volunteers...) and for the Document Freedom Day on March 27 (since OpenOffice is one of the big players here, and should celebrate as such). ApacheCon could be another occasion.
