The Ensembl helpdesk should be able to let you have copies of the MartBuilder XML files used to build the official Ensembl marts, plus the additional scripts to run on the finished marts to add those few bits which MartBuilder is unable (at present) to do itself. The official MartEditor configs for the marts can then be obtained by doing a MartEditor export against the public copies of the marts at martdb.ensembl.org.
