With IP chains. Can you do ports forwarding to an internal address. So
for instance if I have an Internal Mail server can I forward all POP3 to
that mail server using just IP Chains?  Or do I need IP MASQ installed

Hadn't heard of the "Aries" server before.  In looking at their web
site, it looks like the box already has what you need:

As their site indicates that the system uses an "optimized" 2.2.16
kernel. This is most likely based on  ipchains.
