You can set the timeout with "ipchains -M -S xx yy zz" where xx is 
tcp session timeout, yy is the timeout after a tcp fin packet, and zz 
is udp traffic.  Times are all seconds.  Something like 3600 60 60 
are good values.  Take a look at the ipchains manpage.
