No. This is the list of object files (i.e., compiled files ending with .o).

Usually, yes. However, what you are running does not necessarily have much
to do with the kernel *sources* you try to compile.

make xconfig
That allows you to go back and forth in the categories. Be sure to read the
help on *anything* you don't understand. There also is a lot of documentation
in the /usr/src/linux/Documentation directory.
Then:
- make dep; make bzImage; make modules; make modules_install.
- backup your old kernel.
- copy the new kernel from /usr/src/linux/arch/i386/boot/bzImage to where
you normally have your kernel (often /boot).
- lilo (you may want to modify /etc/lilo.conf to allow booting your backup
kernel).
