The Linux firewall just forwards packets based on their type.  I 
haven't heard of any kind of "sabotage filter" for Exchange Server 
(or any other mail server, for that matter).

If your Linux box is running sendmail and relaying mail to/from 
Exchange (as opposed to redirecting tcp port 25 packets), there might 
possibly be something that procmail could do.  There are other 
implications of screening email, too.
