Please take a look at the backend_gtk.py if you're going to customize the toolbar.
fig.canvas.toolbar is derived from gtk.Toolbar. So, you can customize it as you do for any gtk.Toolbar. I guess something like below is similar to DeleteToolByPos in wx.
