You can always change the BUS_TYPE field of the bus where you want to place a generator, but for the OPF the only BUS_TYPE that matters is the reference bus (the voltage angle reference). PV and PQ bus concepts only apply to simple power flow, not OPF.
And the manual is the best document on running OPF’s in MATPOWER, though the Documentation section of the web-site does list a few other related documents.
