I think there are several universities using opencast in deployment, but none that I know of doing 300 hours per week. We're doing around 50 hours per week, and projecting an increase of about 75% for next fall. A feature for version 1.2 of Matterhorn (about a month before testing begins) is a load testing suite which should help clarify how the system scales for different scenarios. I'm coordinating effort around this deliverable, and would be interested in hearing more about the kind of usage you currently see at uow.
