Dear Constantin, As Hank said, there's not so much you can do, apart from set the start and end points of the recording.
The reason why this is so is that the composer (the bundle in the core which performs the transcoding operations) is based in ffmpeg, which works quite well as a re-encoding tool, but has no non-linear edition features. An effort is being made to create another gstreamer-based composer, which would certainly be more versatile, but presents other type of limitations (mostly related to the fact that the Java bindings for gstreamer are still in development). Gstreamer itself is a complicated framework to work with, when it comes to synchronization and specially non-linear editing, though being better than ffmpeg in that field. The approach we are taking at the University of Vigo is using an alternative capture system with UI which allows for the lecturer/professor to pause/resume the recording to that the "delicate" parts do not get recorded (www.galicaster.org). Other vendors may offer similar features, too, but I am not aware of that. As per post-processing the videos, I don't think you have any alternatives but manual edition. A more complex trimming tool in Matterhorn is certainly a nice thing to have, but it's something we won't be seeing in a while for now.
