you can enable the episode service by navigating on your filesystem to the /load directory and find the org.opencastproject.organization-mh_deafult_org.cfg. In there, you'll find a property key that will allow you to enable this service.
After a restart, you should see a "Episodes" tab in the admin ui that will offer a recording centric view rather than an workflow centric view. Note that there can be multiple workflows per each recording, e.g. the one started at ingest time and retract.
