As far as the MediaPackage format goes, you can have virtually *any* number
of tracks of any nature, be it feeds from cameras or screen captures
("presenter"- and "presentation"- type tracks, as we commonly call them).
Now, I haven't been touching the Capture Agent code for a long while, but
as far as I know, the software allows it to capture from virtually *any*
number of devices, if they are correctly configured in the configuration
file.

The bad news are that you need to tamper with the workflow definitions in
order for that new track to be correctly processed and transcoded and, most
important, you need a way to play this triple video in sync. Currently the
player layout does not support it, though I recall it has been said it
could be perfectly capable of playing three streams in sync.

As Chris said, the capture agent could perfectly record two
"presentation-type" tracks, because you can "trick" the system, telling it
one of them is a camera feed when it's not (Matterhorn experts, I'm talking
about the flavors here, don't get me wrong).

Video resolution of the screen captures depends greatly on the capture
device you use. The reference Epiphan cards are a good value for their
price, but they are not certainly designed as a top quality frame grabber.
Those devices which do capture large frame sizes at high frame rates are
exponentially more expensive, but you can get superb video quality in
exchange. If then that quality is lost along the way, when the video is
processed in the core of Matterhorn, the default processing workflow can be
fully configured, so that the resulting video quality fits your needs.
