At least i found the solution is this configuration:
capture.device.PROFESSOR.type=CUSTOM_VIDEO_SRC
capture.device.PROFESSOR.customProducer=v4l2src device=/dev/video0 ! queue
capture.device.PROFESSOR.codec=theoraenc
capture.device.PROFESSOR.container=oggmux
capture.device.PROFESSOR.flavor=presenter/source
capture.device.PROFESSOR.outputfile=video.ogg
capture.device.PROFESSOR.src=/dev/video0
