All the partitions do get mounted in OS X, but as /Volumes/Part3 and similar. One strategy is symlinking the /Users directory to this part, and the other is altering mnttab (or whatever it's called) so the part is actually mounted at /Users. I'm not sure which is more reliable under OS X.
