Well, I have some bad news and some really good news. First, in an ironic sense of things, command lines are the future in some computing cases, so you're probably gonna have to learn to like 'em, or at the very lease tolerate them. Crappy, I know, but as a Mac user since I had an SE in 6th grade, I found it to not be too bad if you go in positive.
Next, since you plan on setting up a webserver/router, you don't need any graphical desktop, just the good ole command line. And then, as long as you're not doing any compiling, it should be fine. I mean, I had debian 2.2 installed on an old Q950 and you can't notice any slow down or lag in the command line. Now, I run my firewall on a Q800 with OpenBSD as the OS. No GUI, just the prompt. So, bad news, command lines here to stay. Good news, almost anything can run a linux/BSD/Unix command line w/o a GUI just fine.
