I had BeOS running on an 8600/200 without any issues for a while but gave the Mac to a friend not long ago.

I have wanted to experiment with NeXTSTEP as I have a NeXTstation with no OS on it (I do not have a boot floppy to start an install from) or install it on an old ThinkPad I have but I do not have a supported SCSI card for the CD-ROM I have ...

Not exactly a Mac project but related to this list to a degree.
