There isn't a module to do this in Mayavi so what you will have to do is 
generate a projected dataset yourself.  The nearest thing I can find in 
VTK is the vtkDEMReader which isn't going to be very useful for you.  If 
you do find a general purpose solution do let us know if you can 
contribute it back for this would make a very valuable contribution to 
Mayavi.  I am also CCing the enthought-dev list in case someone has 
something of interest to share.
