To my knowledge, the only book that covers MbUnit at all is James Avery and Jim Holmes "Windows Developer Power Tools" (see: http://www.oreillynet.com/catalog/9780596527549/ ) but it is only one of the many developer tools covered in the book and as such only has about 10 pages dedicated to MbUnit.
A quick introduction is provided by Julian Hidalgo here: http://www.hpoffice.cl/julian/mbunitquickstart/ which will give you a guide to installation and a few ways to run unit tests. My recommendation is to use the TestDriven.net addin for Visual Studio.
