You mean load up and test Outlook plugins? I don't see why not. However you may need to do a bit of work to load up Outlook and get things moving.
We currently have integration tests involving ReSharper and Visual Studio. For ReSharper, we have an [AssemblyFixture] that loads up the ReSharper Shell and configures it appropriately. For Visual Studio, we do similar things, this time loading up Visual Studio via COM. I expect you might be able to perform integration testing of your Outlook plugins if you started up Outlook via COM and got things going.
