Ok, and as often happens as soon as I ask a question, I stumble across a search term that gets me the answer!
So, to answer my own question (and to help anyone else who is trying to organize their own wiki), here's what I had to do: Look at all of the pages in Special:AllPages and then, within the text of each page, insert [[Category:NAME]] to create the category tag. To view all of the categories, go to Special:Categories And yes, they're all automatically generated.
