We use images in our signatures to promote our events --I removed it for this email. Doing so just seemed like a reasonable and free way to advertise. With all our full-time staff, we generate tens of thousands of emails each year in the course of business matters. We haven't had any complaints from patrons. Swapping out the signature image and links is done in Google Apps.
