There are literally dozens and dozens of university IP policies available on the Web.  You can google them using the terms like "intellectual property policy university" or "copyright policy university" and get a large list, or you can go to a site called "Copyown" (http://www.inform.umd.edu/copyown/) which is a compilation of various university IP-related policies. (Warning:  many of the links on this site are broken, but it is still worth a look for a sense of what is available.....)

Museum policies are a much rarer.  The only ones I know of that are available on the Web are:
 the Royal Ontario Museum copyright and trademark policies at http://www.ninch.org/copyright/2002/rom.copyright.pdf and http://www.ninch.org/copyright/2002/rom.tm.pdf),
 the Tech Museum of Innovation's policy on IP in exhibits (http://www.thetech.org/rmpo2/policiesstandar_/exhibits_/policystatement/policystatement.html)
and  the Maine State Museum policy on collections reproductions (http://www.state.me.us/sos/cec/rcn/apa/depts.htm )

Other museums do have institution-wide IP policies, but they have not made them publicly available, so you have to ask around.  Most museums have IP and rights managements procedures, but not policie per se.  Many museum web sites will list a web-use IP policy that outlines how content from the web site can be used by others.

As for archives, I am totally ignorant of what is available, but I'm sure the Society of American Archivists can help you out here (http://www.archivists.org).
