I agree with you on the AT mic. For a single point stereo mic, it sounds great.
Of course, it is a full size mic, so stealthing is not really possible with it.

Binaurals (Omni-directional mics) are fine as long as you are relatively close
to the sound source,  the audience is fairly quiet and the acoustics of the
venue are good. Otherwise, I would recommend cardioids (directional mics).
