I'm not certain, but I think you play to the point you want to over
write, hit pause and the hit record. Anoter way that might be even
better is to play to the ppoint you want to recod from and insert a
track mark. check that it is in the correct place and then recodr you
new material and move it to that track mark, and combine the two
tracks.
